A respected grower-producer from Grand Cru village of Bouzy where the area is known for growing the finest Pinot Noir in all of Champagne. Antoine Paillard started the vineyards in 1768 and has remained in the same family. The estate is now run by brothers Antoine and Quentin who are eight generations. Farming is organic and winemaking is as natural as possible. All wines are done with wild ferments, relatively low in dosage, and are rich and balanced. The top cuvée of the estate is La Grande Récolte which is a blend of 55% Pinot Noir and 45% Chardonnay that has spent ten years in the cellar and only made in great vintages.
